Roasted Vegetable Pasta

Comfort food which is actually healthy!


 Two peppers

1 courgette

40g Frozen peas

1tsp cooking oil

100g Wholewheat Pasta

grated cheese

Let's Cook:

Grab a chopping board and cut the peppers and courgette into chunks. Place them onto a baking dish or tray, drizzle olive oil and place in the oven at 180°C for 25-30 mins.

In the meantime, cook the pasta by following the instructions on the packet. Once the pasta is cooked, pour the frozen peas into the water in the pan, turn the heat off and leave until the peas are defrosted.

Drain the pasta and peas, and stir the roasted vegetables into the pan.

Add some cheese and dig in! (You could substitute the cheese for another product such as nutritional yeast if you want to keep it vegan).
