Loaded Black Bean Nachos

If you’re going to make nachos, this is the way to do it. Delicious, crunchy nachos with black beans, sweetcorn and guacamole.


Bag of tortilla chips

20g grated cheese

1-2 fresh chopped chillis 

handful sweetcorn

handful black beans

1 ripe avocado

Pinch of salt

squeeze of lemon or lime juice

Let's Cook:

Empty the bag of chips into a large baking tray or dish, and sprinkle over the sweetcorn,  and beans. Chop up the fresh chilli and sprinkle on top before covering everything with lot’s of grated cheese. Get the tray into the oven at 180°C and cook for 15 - 20 minutes.

While this is cooking, grab a bowl and prepare the guacamole. Peel and de-stone the avocado and scoop into the bowl. Sprinkle with salt and add lemon or lime juice (if you have any). Mash everything together with a fork, but stop while it’s still a bit chunky. You can add any other extra flavourings at this stage.

Serve the nachos hot and don’t forget to scoop plenty of guacamole on the side.
