Roasted Tomato and Courgette Pasta
1 small pack cherry tomatoes
1 clove chopped garlic
1 tbsp olive oil
salt and pepper
Heat your oven to 210°C. Start by chopping up the courgette into chunks, and chopping the tomatoes in half. Throw them onto an oven tray with the chopped garlic, drizzle about a tablespoon of oil over the veg and get it in the oven for about 20 minutes.
While that's roasting, cook the pasta following the timings on the back of the packet. Once it's cooked, scoop out a cup of water from the pan and save this for later. You can then go ahead and drain the pasta
Take the tray out of the oven and add the veg to the pan of pasta. Throw in the grated cheese, season with salt and pepper, pour in a bit of the pasta water from earlier, and mix everything up.
