Avocado and Egg Quesadilla

My all time favourite brunch, though I’ve been known to eat it for lunch and dinner too. One of your 5 a day, full of healthy fats and filling protein.

Avocado and Egg Quesadilla

Ingredients

½ Avocado

1 medium egg

1 whole wheat tortilla

Jalapeños

25g cheese 

Cooking oil

Salt and Pepper

Ketchup/condiments to dip 

Let's cook

Put small amount of oil in frying pan and starting frying the egg . In the meantime, mash the avocado and spread it onto one half of the tortilla.

Sprinkle the cheese evenly on top of the avocado and top with the jalapeños. Once the egg is fried, take it off the pan and place it on the tortilla. Add a pinch of salt and pepper before folding the tortilla into half and place back onto the frying pan 

Heat for a few minutes on each side until golden brown and the cheese is wonderfully melted. Cut it half, enjoy with dip of your choice (Hot sauce or ketchup is great)
